Join us on Friday, April 23, 2021, 10 a.m. for NATIVE HEALTH’s free, monthly Read It and Eat online class on the NATIVE HEALTH Facebook page: https://www.facebook.com/nativehealthphoenix. Mallory Smith, NATIVE HEALTH Food Coordinator will read There’s a cow in the Cabbage Patch, by Clare Beaton, and show you how to make Red Cabbage Salad with your children.

The first 20 Native Americans who sign up will receive, by mail a $10 Sprouts gift card. Our supplies are limited, so please register one person per one household:    

 

Here’s the recipe if you wish to follow along with Mallory:

Red Cabbage Salad:

Ingredients: (makes 4 servings)

  • 1 head of purple cabbage
  • 1/3 cup cilantro
  • 1 cup green onions 
  • 4 carrots
  • 1/2 cup cherry tomatoes 
  • 3 tbsp apple cider vinegar 
  • 2 tsp of canola oil
  • 1 tbsp lemon juice Salt and pepper to taste

Instructions:

  1. Have child peel outer two layers of cabbage and then have an adult shred the cabbage and carrots.
  2. Have adult chop green onions, cherry tomatoes and cilantro.
  3. Allow child to mix shredded cabbage, carrots, green onions, cherry tomatoes and cilantro.
  4. Allow child to add apple cider vinegar, canola oil, and lemon juice to another bowl and mix.
  5. Allow child to add dressing to bowl of vegetables.
  6. Allow child to mix dressing and vegetables together.
  7. Have an adult add salt and pepper to taste while child is mixing (adjust amount as needed)
  8. Scoop out desired amount and enjoy!
